One of my favorite meals to make for dinner is anything using a casserole dish! I love the ease of tossing everything into a wide baking dish, then serving it for dinner, and for us, we always have leftovers for lunch or dinner the next day. Easy peasy.

Investing in a good, solid casserole dish is a smart idea! My casserole dish is one of the most used baking dishes in my kitchen. Love it! My fave vegan casserole dish is the one at top, it’s from Bambeco. Sadly, that company closed a while back, but here are a few others I found online..

What Makes it a Casserole?

When I think of a classic casserole dish, my mind goes to vintage recipes. I remember reading Garfield books as a kid and there was always a reference to ‘Tuna Casserole.’ And in a negative way sometimes too! So casseroles were random dishes with ‘kitchen sink’ ingredients tossed in and baked.

But let’s flash-forward to 2020 and vegan casserole recipes to me are basically anything you can bake and serve from a casserole dish! So that includes lots of yummy, family-friendly, healthy, cozy, creative vegan recipes. Recipes like lasagna and enchiladas and as you will see below, so many more!
