Bacon And Egg Casserole – Low-Carb Choices

  • The best thing about this recipe is the crispy bacon! I like to make a bunch of bacon and store it in my refrigerator to use in recipes like this one.
  • To keep it keto-friendly, I suggest using sugar-free bacon. This means don’t use any maple-cured or maple-flavored bacon.
  • If you have a dairy sensitivity or can’t drink milk, you can use your favorite keto-friendly milk as a substitute. Unsweetened almond milk works perfectly in this casserole.

Low Carb Breakfast Casserole

This is the perfect recipe to make-ahead for large breakfast gatherings and brunches. Make it the night before and then store it in your refrigerator with a lid. Then, just reheat it in the oven and it will taste just as yummy as the first time you made it!

I like to keep this in my refrigerator and feed it to my kids on really busy and chaotic mornings. It’s so easy to just wake up, pop it in the oven, and then it is nice and hot for them after they get dressed.

If you make this ahead of time, store it in your refrigerator in an airtight container. It will last up to 5 days this way.

It’s also a good choice as a freezer meal too! Just bake it in a freezer-friendly dish. Then, let it cool completely and seal it tightly with a lid or tinfoil. This will last about 3 months in the freezer.

Best Keto Breakfast Casserole

Another thing you will love about the casserole is how easy it is to customize it. With just a few changes, the entire thing will taste differently. Here are a few of my favorite things to change about this casserole:

  • Use a different type of cheese. Pepper jack or mozzarella will change the flavor.
  • Use sausage or chorizo instead of bacon
  • Add chopped jalapenos for a little kick
  • Mix-in some baby spinach for extra fiber and nutrients

I like to top my casserole with sugar-free ketchup. Serve it with some 90-second bread and you have a complete keto breakfast with no extra effort!
