Italian Bread Recipe For Bread Machine

One of the main reasons why I got a bread machine was because I found myself stopping at the local general store twice a week to pick up a Italian loaf. One of my first recipe goals was to make a Italian Bread that my family would love served with dinner. This bread is now made weekly in my kitchen!

We love this bread served alongside lasagna, Creamy Tomato Soup, and Slow Cooker Casseroles!

Bread Machine Recipes

If you’re new to the bread machine world you’ll want to first read the manual that came with it. Not only will the manual give you some basic recipes, but it’ll also talk about the order you should add your ingredients into the pan.

This is a important step that shouldn’t be overlooked, so please follow your bread machines ordering for the best possible bread. Most likely the order will look something like this:

  1. Water (Liquids)
  2. Flour
  3. Sugar
  4. Dry Milk (note: you don’t need milk for this recipe)
  5. Salt
  6. Butter / Oils
  7. Yeast

It’s important to add them in the right order as it will affect the bread quality when it’s kneading it.

I have a Zojirushi BB-SSC10 bread maker which makes 1 pound loaf sizes, perfect for my family.

How to Make Homemade Bread

Time to make Italian Bread! Grab your bread machine and plug it in. Bread machines take on average 3 hours to make bread from beginning to end. The only work you’ll do is in the first 5 minutes!

Add your cold water to the bread pan. Cold water is important for this bread, so don’t use warm water.

Now add your bread flour.

Everyone has their favorite bread flour but in my opinion they aren’t all created equally. I stick with King Arthur or Bob’s Red Mill, I’ll buy whichever one is on sale at the grocery store.

When it’s done baking your machine will probably let out a fun little jingle. Do a little dance because you just made delicious Italian Bread! (Want to know something really crazy? While I was typing the last line my loaf of bread finished and it started playing the jingle! How’s that for perfect timing? Now I’m worried that my bread machine is watching me!).

After it’s finished baking, your machine will most likely turn on warm mode to keep it warm. You can keep it like this, or if you’re impatient like me you’ll take it out of the machine (careful: it’s hot!) and then remove the bread from the pan. No matter how many times I bake bread I’m always amazed by how easily it slides out of the pan!

Now it’s time to cut a slice of this bread and enjoy! I love my Italian bread with a little bit of butter, or raspberry jam if I’m looking for a treat!

Adding Ingredients to the Bread Machine

Manufacturers usually recommend adding the liquids first, followed by dry ingredients, with the yeast going in last. This keeps the yeast away from the liquid ingredients until kneading begins.

Which yeast is better for bread machine? ›

Bread machine yeast and rapid-rise yeast are specially formulated for the bread machine and become active more quickly than active dry yeast. You can use active dry yeast in your bread machine, but it should be dissolved in water before being used.

Can I use all-purpose flour instead of bread flour in bread machine? ›

Yes! All-purpose flour has a 9% to 12% gluten content, while bread flour's gluten content falls in the 10% to 13% range. Even if your all-purpose flour lacks gluten, you can still use it in the bread machine. Again, the worst that will happen is that your bread will not rise as much as it would with bread flour.

Why is my Italian bread so dense? ›

The dough was under or over proofed. This is the most common reason for dense bread because it can be hard at first to determine when dough is ready to bake. But both under and over fermenting can cause dense bread.

How can I make my bread lighter and fluffy? ›

All it takes is a small amount of dough enhancer per loaf to create a much lighter and fluffier result. Using a dough enhancer like Vital Wheat Gluten works to improve the texture and elasticity of the dough and elongate the strands of gluten. Doing so allows more room for the gas in the dough to develop and rise.

How do I make my bread machine bread better? ›

Some recipes will advise adding sugar, which, in addition to making the bread a little sweet, helps the yeast to rise better. Others also suggest adding a little oil, such as olive or vegetable oil. This helps the dough form, preventing it from sticking to the sides of the pan, and makes the bread more tender.

What adds flavor to homemade bread? ›

Sweeteners such as malt and honey are used to add flavor to bread dough. Malt, which is available in powder and liquid form, can be added to almost any bread. It's important to use a nondiastatic version, though, as diastatic malt has active enzymes, which, in excess, will make dough extremely sticky.

What are the three most important ingredients in bread? ›

The principal ingredients in all bread are:
  • Flour.
  • Yeast.
  • Salt.
  • Water.

Can regular flour be used in a bread machine? ›

King Arthur Unbleached All-Purpose Flour is perfect for bread machines.

Do you put milk or water in a bread machine? ›

You would enrich the dough with milk proteins and fat. You will need a bit more milk than the amount of water required (because of the milk solids). The dough will be softer, the crumb less open.

Can active dry yeast be used in bread machine? ›

Historically, active dry yeast needed “activated” by dissolving it in water before using it. They called this proofing. However, changes in the manufacturing of active dry yeast enable active dry yeast to be in bread machines without proofing. Yes, you read that correctly.

Should I use regular flour or bread flour for bread machine? ›

Of course you can! But 'all purpose' flour has a little less gluten, so your bread won't rise as high. If you're making bread the old-fashioned way, by hand, you can let it rise a little longer. But a bread machine does it exactly the same every time.

What flour do professional bakers use for bread? ›

While bread flour is more than adequate for everyday breads, some professional bakers use high-gluten flour with a 14% protein content to provide extra strength to dense, chewy doughs like bagels and pizza dough. High-gluten bread flour gives milk bread it's taut structure and compact (but tender) crumb.

What is the healthiest flour for bread machines? ›

Whole-Wheat Flour

Whole-wheat flour is much heartier than all-purpose flour and produces denser baked goods with a more robust flavor. Milled from wheat berries with the nutritious bran and germ still intact, whole-wheat flour is rich in fiber and essential micronutrients like iron, magnesium and vitamin B6.

What flour is best for bread making and why? ›

Strong or bread flour has a higher protein level that plain flour. It is this protein that contributes to the strength of the gluten. However, this is where it gets complicated. Looking for flour labelled as 'strong' or 'bread' flour is a good idea when you are just starting out on your bread making journey.
