I like to use a mix of both pecan cookie pieces and pecan flour together in this recipe. This recipe actually used to use almond flour instead of pecan flour. However, after trying it out with pecan flour, It not only improved the taste but also made these cookies more keto-friendly.

As a matter of fact, by switching to pecan flour I almost cut the net carbs in each keto pecan shortbread cookie in half. Pecan flour is about as low in net carbs as you can go with nut flours. In fact, 1/4 cup of almond flour has only about 1 net carb. Almond flour, on the other hand, has roughly 3 net carbs per 1/4 cup.

If cutting the net carb nearly in half wasn’t enough, these keto pecan shortbread cookies also taste much better as well. Pecan flour has a great nutty taste and really adds a bunch of flavor to these low-carb cookies. They are after all pecan shortbread cookies.   2. 1 cup pecan flour
  3. one 4oz stick of butter melted
  4. 1/4 cup Swerve Sweetener

  1. First pre-heat the oven to 350 degrees Fahrenheit
  2. Next, mix together pecan cookie pieces, pecan flour, and Swerve Sweetener in a mixing bowl. Making sure to break up any clumps of almond flour.
  3. Then, pour the melted butter into the mixing bowl with the dry ingredients and mix well using a silicone spatula.
  4. After that, roll the dough out into 10 balls and flatten them down by hand unto a greased baking sheet. They should be about one centimeter high.
  5. Bake for 12 minutes.
  6. Take them out of the oven and place on a cooling rack until cool.
