This delicious recipe has the same fluffy store-bought biscuit dough, covered in caramelized sugar and cinnamon, but each biscuit has a gooey surprise inside. This easy gooey gorilla bread recipe is great for a special weekend snack or dessert. We even think that you could sneak a few pieces for breakfast, if you want. This treat would be delicious with a hot mug of tea or coffee!

Ingredients

  • 1/2 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup butter (1 stick)
  • 1 cup packed brown sugar
  • 2 (8-ounce) packages cream cheese
  • 2 (12-ounce) cans refrigerated biscuits (10 count)
  • 1 1/2 cup pecans

Gorilla Bread Recipe

Instructions

  1. Preheat the oven to 350 degrees. Spray a bundt pan with nonstick cooking spray.

  2. Mix the granulated sugar and cinnamon in a small bowl. In a saucepan, melt the butter and brown sugar over low heat, stirring well; set aside.

  3. Cut the cream cheese into 20 equal cubes. Press the biscuits out with your fingers and sprinkle each with 1/2 teaspoon of the cinnamon sugar. Place a cube of cream cheese in the center of each biscuit, wrapping and sealing the dough around the cream cheese.

  4. Sprinkle 1/2 cup of the nuts into the bottom of the bundt pan. Place half of the prepared biscuits in the pan. Sprinkle with cinnamon sugar, pour half of the melted butter mixture over the biscuits, and sprinkle on 1/2 cup of nuts. Layer the remaining biscuits on top, sprinkle with the remaining cinnamon sugar, pour the remaining butter mixture over the biscuits, and sprinkle with the remaining 1/2 cup of nuts.

  5. Bake for about 30 minutes or until golden brown. Remove from the oven and cool for 5 minutes. Place a plate on top and invert.

Can you make gorilla bread the night before?

There's nothing quite like a make-ahead breakfast recipe. Being able to prep the night before makes your mornings simple and smooth. Much like other monkey bread recipes, you can absolutely prep this recipe the night before if you'd prefer. You do run the risk of the dough rising early on, but you can help combat this by placing a wet towel over the ingredients in your fridge overnight. You could also make the whole recipe the night before baking and all instead. Simply pop it in the oven for a few minutes for that warm and gooey texture we all love the next morning.

I enjoyed that this was not as cloyingly sweet as some monkey breads and gorilla bread recipes I have had. I particularly liked the cream cheese filling, as it turned out to be a surprisingly smooth contrast to the rest of the treat.
